Riverbend Cattle Co. Baked Withlacoochee Potatoes

Ingredients
- 3-4 medium-sized potatoes, cut into small chunks
- Olive oil (2-3 tablespoons, depending on the amount of potatoes used)
- 1 small onion, diced
- Riverbend Cattle Co. Withlacoochee Seasoning (to taste)
Instructions
- Preheat oven to 350°F.
- Wash the potatoes and cut them into small cubes, about 1-inch in size.
- Dice the onion into small pieces.
- In a bowl, combine the onion and potatoes with the olive oil, stirring to coat evenly.
- Sprinkle Withlacoochee seasoning over the mixture and stir to coat the potatoes and onion thoroughly. (Note: The seasoning has a bit of spice, so adjust according to your preference.)
- Spread the potatoes and onions on a baking pan.
- Bake for 40-45 minutes or until the potatoes are tender.
