10-Minute Ground Beef Tacos for Busy Weeknights

Ingredients:

  • 1 - 1 ½ lb Riverbend Cattle Company Ground Beef

  • 1 tbsp olive oil

  • 1 packet taco seasoning (or homemade seasoning: chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper)

  • 1/4 cup water

  • 8 small soft corn or flour tortillas

  • Toppings: shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, salsa, jalapeños, lime wedges, fresh cilantro

Instructions:

  1. Cook the Ground Beef: Heat the olive oil in a large skillet over medium-high heat. Add the Riverbend Cattle Company Ground Beef to the pan and break it apart with a spatula. Cook for about 5-6 minutes, or until the beef is fully browned and cooked through.

  2. Season the Beef: Once the beef is browned, stir in the taco seasoning and water. Mix well, and let the beef simmer for 2-3 minutes until the seasoning is well absorbed, and the mixture thickens slightly.

  3. Warm the Tortillas: While the beef is simmering, warm the tortillas in a separate pan or microwave until soft and pliable.

  4. Assemble the Tacos: Spoon the seasoned ground beef onto each tortilla, dividing the beef evenly. Then, add your favorite toppings like shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
